I would like to have one spreadsheet with different worksheets for each database. I see there is an Excel Instance but it's unclear what it does.

Excel Instance connects to a running instance of excel and exports the dataset on a new sheet. It does not save the file - you have to do that on your own.

Excel Instance exports the data to and existing instance of Excel running on your machine, if on eexists. If not, it creates one.

I'm not sure what you mean by "different worksheets for each database". each export will create a new Worksheet in the selected Workbook (in the specified Excel document or currently running instance, depending on your selection).

I'm in no position to change Toad, but that's been my experience with how it works.
